Each product has its own Direct Checkout panel in Product data on the product edit screen. Settings there win over the global ones for that product.

| Disable popup checkout / Disable sticky button | Turn the popup or the sticky bar off on this product. |
Categories have a direct checkout switch on their edit screen. With the scope set to Individually, only the products and categories you switch on use direct checkout. The products list shows a column with each product’s setting.
